Preparation
  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, combine the graham cracker crumbs and melted butter until blended.
  3. Press mixture into the bottom of a greased 9-inch springform pan; bake for 8-10 minutes until golden brown. Allow to cool.
Cheesecake Filling
  1. In a large bowl, beat the softened cream cheese until smooth.
  2. Gradually add powdered sugar and vanilla extract, mixing well.
  3. In another bowl, whip the heavy cream until stiff peaks form and then gently fold it into the cream cheese mixture.
Coloring the Cheesecake
  1. Divide the cheesecake mixture into two bowls.
  2. Add red food coloring to one bowl and green to the other, stirring until vibrant.
Layering
  1. Spoon the red cheesecake mixture onto the cooled crust, spreading it evenly.
  2. Layer the green mixture on top and smooth with a spatula. Swirl the two layers for a marbled effect.
Chill and Serve
  1. Cover with plastic wrap and refrigerate for at least 4 hours, or overnight.
  2. Once set, top with colorful holiday sprinkles.
