Preparation
- Preheat the oven to 350°F (175°C) and grease a donut pan.
- In a mixing bowl, combine almond flour, vanilla protein powder, baking powder, and salt.
- In another bowl, whisk together eggs, honey (or maple syrup), applesauce, lemon juice, and lemon zest.
- Gradually add the wet ingredients to the dry ingredients until well combined.
- Pour the batter into the prepared donut pan, filling each mold about 3/4 full.
Baking
- Bake for 10-12 minutes or until a toothpick comes out clean.
- Allow donuts to cool before glazing.
Glazing
- Mix powdered sugar with lemon juice until smooth, then drizzle over the cooled donuts.
Notes
Use fresh lemons for best flavor; don’t overmix the batter; make sure to grease the donut pan thoroughly.
