For the loaf

For the glaze
  • 2 cups powdered sugar For glazing the loaf.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In another bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, mixing thoroughly after each addition.
  5. Add the vegetable oil, sour cream, milk, lemon juice, lemon zest, and vanilla extract into the butter-sugar mixture. Mix until just combined.
  6. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just blended.
  7. Pour the batter into the prepared loaf pan and spread it evenly.
Baking
  1. Bake for 55 to 70 minutes, or until a skewer inserted into the center comes out clean.
  2. Allow the loaf to cool in the pan for 10 to 15 minutes, then invert it onto a wire rack to cool completely.
Glazing
  1. For the glaze, whisk together the powdered sugar, lemon juice, and lemon zest until smooth.
  2. Once the loaf is completely cool, pour the glaze over the top and let set for at least 30 minutes before slicing.

Notes

Use fresh lemons for juice and zest for the best flavor. Consider adding poppy seeds or chopped nuts for extra texture.
