Preparation
- Preheat the oven to 350°F (175°C) to ensure it’s ready for baking your tartlets.
- In a sizable mixing bowl, combine the all-purpose flour and powdered sugar. Cut in the unsalted butter until the mixture resembles coarse crumbs.
- Stir in the egg yolk until fully incorporated, then press the mixture into individual tartlet pans.
Baking the crust
- Place your tartlet pans in the preheated oven and bake for about 15 minutes or until the edges are lightly golden brown.
Preparing the filling
- While the crust is baking, whisk together the fresh lemon juice, granulated sugar, eggs, and lemon zest in a separate bowl until smooth and well-combined.
Final baking
- Pour the lemon curd mixture into the baked tart shells, filling them generously.
- Bake for another 15-20 minutes, until the filling is just set but still slightly jiggly in the center.
Serving
- Once baked, allow your tartlets to cool completely before removing them from the pans. Serve them topped with a dollop of whipped cream.
Notes
For elevated flavors, consider adding a pinch of sea salt, more lemon zest, or infusing the cream with herbs like mint or basil. Store-bought tartlet shells can also be used if you're short on time.
