Preparation
- Preheat your oven to 350°F (175°C).
- Prepare your baking sheet lined with parchment paper.
- Cream together butter and sugar until light and fluffy.
- Mix in the egg, lemon zest, lemon juice, and vanilla extract.
- In a separate bowl, combine all-purpose flour, baking powder, and salt.
- Scoop the dough using a tablespoon.
- Make a well in each cookie and fill with lemon curd.
Baking
- Bake for 12 to 15 minutes until edges are golden brown.
- Sprinkle sugar on top and caramelize with a kitchen torch.
- Let cool on baking sheet, then transfer to a wire rack.

These cookies can also be served with vanilla ice cream or fresh fruit. Store leftovers in an airtight container or freeze individual cookies for later.
