Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Prepare your baking sheet lined with parchment paper.
  3. Cream together butter and sugar until light and fluffy.

  5. In a separate bowl, combine all-purpose flour, baking powder, and salt.
  6. Scoop the dough using a tablespoon.
  7. Make a well in each cookie and fill with lemon curd.
Baking
  1. Bake for 12 to 15 minutes until edges are golden brown.
  2. Sprinkle sugar on top and caramelize with a kitchen torch.
  3. Let cool on baking sheet, then transfer to a wire rack.

Notes
