Ingredients
  

For the pudding
  • 1 cup almond milk or your preferred milk
  • 1/4 cup chia seeds
  • 2 tablespoons maple syrup or honey if not vegan
  • 1/2 teaspoon vanilla extract
  • 1/2 cup lemon curd store-bought or homemade
  • 1 piece Zest of 1 lemon
  • to taste fresh berries for topping, optional
  • to taste mint leaves for garnish, optional

Method
 

Preparation
  1. In a medium-sized mixing bowl, combine the almond milk, chia seeds, maple syrup, and vanilla extract. Whisk well until everything is fully integrated.
  2. Cover the bowl with plastic wrap or a lid and refrigerate for at least 4 hours or overnight.
  3. After the chia pudding has set, stir it well to break up any clumps.
  4. In a separate bowl, mix the lemon curd and lemon zest until well combined.
Assembly
  1. Spoon a layer of chia pudding into serving glasses or bowls, followed by a layer of the lemon curd mixture. Repeat the layers until the glasses are filled, finishing with a dollop of lemon curd on top.
  2. Garnish with fresh berries and mint leaves if desired.
Serving
  1. Serve immediately or refrigerate for a few more hours to allow the flavors to meld.

Notes

For an extra creamy texture, let the chia pudding sit in the refrigerator overnight. Experiment with different fruits such as mango or strawberries for added variety.
