- After the chia pudding has set, stir it well to break up any clumps.
- In a separate bowl, mix the lemon curd and lemon zest until well combined.
Assembly
- Spoon a layer of chia pudding into serving glasses or bowls, followed by a layer of the lemon curd mixture. Repeat the layers until the glasses are filled, finishing with a dollop of lemon curd on top.
- Garnish with fresh berries and mint leaves if desired.

- Serve immediately or refrigerate for a few more hours to allow the flavors to meld.
