Cooking
- In a large pan, heat the olive oil over medium-high heat.
- Add diced chicken, season with salt and pepper, and sauté until browned and fully cooked through, about 5-7 minutes.
- Toss in minced garlic and vegetables (broccoli, bell pepper, carrot, and snap peas) and stir-fry for an additional 5-7 minutes until tender yet vibrant.
- Add the cooked orzo and lemon juice into the pan, mixing well to infuse flavor.
- Serve the stir fry hot, garnished with lemon slices if desired.
Notes
Marinate chicken in lemon juice for 30 minutes before cooking for added flavor. Feel free to add seasonal veggies like zucchini or asparagus. Prepare orzo and chop veggies ahead of time for quicker cooking.
