Preparation
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan or line it with parchment paper.
- In a medium saucepan, melt the butter over medium heat. Remove from heat and stir in the granulated sugar until well combined.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract until smooth.
- In a separate bowl, whisk together the flour, salt, lemon zest, and fresh lemon juice.
- Gradually fold the dry ingredients into the wet mixture until just combined. Pour the batter into the prepared baking pan, spreading it evenly.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
Icing Preparation
- While the brownies are baking, prepare the lemon icing by whisking together the powdered sugar and 2 tablespoons of lemon juice until smooth. Set aside.
Cooling and Serving
- Once the brownies are done baking, remove them from the oven and let them cool in the pan for about 10 minutes.
- Pour the lemon icing over the warm brownies, spreading it evenly. Allow the brownies to cool completely in the pan before cutting into squares.
- Serve and enjoy your delicious lemon brownies!
Notes
For a healthier twist, consider using coconut sugar instead of granulated sugar or substituting almond flour for all-purpose flour for a gluten-free option. They can be stored in an airtight container or frozen for later enjoyment.
