Preparation
- In a mixing bowl, add almond flour, rolled oats, and shredded coconut. Optionally add chia seeds.
- Mix the dry ingredients thoroughly.
- Pour in the maple syrup or honey, followed by lemon zest, lemon juice, and vanilla extract. Add a pinch of salt and stir until well combined.
- If the mixture is too crumbly, add a splash of more maple syrup or lemon juice until it reaches the right consistency.
- Scoop out small portions and roll them into 1-inch balls.
- Optionally roll the balls in extra shredded coconut.
- Place the balls on a parchment-lined baking sheet and refrigerate for at least 30 minutes.
- Once chilled, your Lemon Bliss Balls are ready to serve!
Notes
Store any leftovers in an airtight container in the fridge for up to a week. These bliss balls can also be frozen for longer storage.
