  • 1 cup almond flour
  • 1/2 cup rolled oats
  • 1/4 cup shredded coconut, unsweetened
  • 1/4 cup maple syrup or honey Use maple syrup for a vegan version.
  • Zest of 1 lemon
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Extra shredded coconut for rolling (optional)
  • 1 tablespoon chia seeds or flaxseeds (optional)

Method
 

Preparation
  1. In a mixing bowl, add almond flour, rolled oats, and shredded coconut. Optionally add chia seeds.
  2. Mix the dry ingredients thoroughly.
  3. Pour in the maple syrup or honey, followed by lemon zest, lemon juice, and vanilla extract. Add a pinch of salt and stir until well combined.
  4. If the mixture is too crumbly, add a splash of more maple syrup or lemon juice until it reaches the right consistency.
  5. Scoop out small portions and roll them into 1-inch balls.
  6. Optionally roll the balls in extra shredded coconut.
  7. Place the balls on a parchment-lined baking sheet and refrigerate for at least 30 minutes.
  8. Once chilled, your Lemon Bliss Balls are ready to serve!

Notes

Store any leftovers in an airtight container in the fridge for up to a week. These bliss balls can also be frozen for longer storage.
