  • 1/8 teaspoon cayenne pepper Adds a touch of heat, which you can adjust to your liking.

Preparation
  1. Begin by placing the quartered onion and fresh parsley into a food processor. Pulse until finely chopped, creating a fragrant base for your kafta.
  2. In a large mixing bowl, combine the lean ground beef with the chopped parsley-onion mixture and all of the spices. Use your hands to mix thoroughly; this ensures that each bite packs in all those delicious flavor profiles.
  3. Take a handful of the meat mixture and mold it around skewers. Form the kebabs to be about 1 to 1.5 inches thick for even cooking and perfect bite-sized pieces.
Cooking
  1. Preheat your gas grill to medium-high and brush it lightly with oil. Grill the kebabs for about 4 minutes on each side or until cooked through and charred, providing that beautiful caramelization and smoky flavor.

Notes

Tips: Don’t overmix the meat! If using wooden skewers, soak them in water for at least 30 minutes before grilling to prevent burning. Feel free to swap parsley for mint or cilantro and experiment with different meats.
