- Begin by placing the quartered onion and fresh parsley into a food processor. Pulse until finely chopped, creating a fragrant base for your kafta.
- In a large mixing bowl, combine the lean ground beef with the chopped parsley-onion mixture and all of the spices. Use your hands to mix thoroughly; this ensures that each bite packs in all those delicious flavor profiles.
- Take a handful of the meat mixture and mold it around skewers. Form the kebabs to be about 1 to 1.5 inches thick for even cooking and perfect bite-sized pieces.
Cooking
- Preheat your gas grill to medium-high and brush it lightly with oil. Grill the kebabs for about 4 minutes on each side or until cooked through and charred, providing that beautiful caramelization and smoky flavor.
