Layered Sweet Potato Lasagna

Ingredients
  

Lasagna Base
  • 12 oz Lasagna noodles Use pre-cooked or no-boil noodles for quicker preparation.
Vegetable Layer
  • 2 medium Sweet potatoes Thinly sliced.
  • 8 oz Fresh spinach Can be substituted with other leafy greens like kale.
Cheese Mixture
  • 15 oz Ricotta cheese Creamy filling.
  • 1 cup Mozzarella cheese Shredded, for topping.
  • 1/2 cup Parmesan cheese Grated, for topping.
Sauce & Seasonings
  • 2 cups Marinara sauce Use store-bought or homemade.
  • 2 tablespoons Olive oil For drizzling before baking.
  • 1 teaspoon Salt To taste.
  • 1 teaspoon Pepper To taste.
  • 1/2 teaspoon Nutmeg Adds warmth to the cheese mixture.
  • 2 cloves Garlic Can be sautéed for additional flavor.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Boil the lasagna noodles according to package instructions until al dente.
  3. Slice sweet potatoes thinly and steam or boil them until fork-tender.
  4. In a bowl, mix together ricotta cheese, spinach, salt, pepper, and nutmeg.
Layering
  1. In a baking dish, start layering with marinara sauce, followed by lasagna noodles, sweet potatoes, and the ricotta mixture.
  2. Repeat the layers, finishing with noodles and a top layer of marinara sauce.
  3. Sprinkle mozzarella and Parmesan cheese on top.
Baking
  1. Cover with foil and bake for 25 minutes.
  2. Uncover and bake for an additional 15 minutes until the cheese is golden and bubbly.
  3. Let it cool for a few minutes before serving.

Notes

For added flavor, consider using sautéed garlic or add vegetables like mushrooms or zucchini to the ricotta. Drizzle olive oil on top for a crispier finish.
