Ingredients
  

For the Casserole
  • 1 pound Ground Beef Juicy, well-seasoned beef
  • 1 package Taco Seasoning Zesty packet for flavor
  • 2 cans Refried Beans Creamy and smooth base
  • 1 can Black Beans Adds texture and protein
  • 1 cup Corn Sweet pops to lighten the dish
  • 6 large Flour Tortillas Soft tortillas to wrap everything
  • 1 cup Salsa Tangy touch to tie elements
  • 2 cups Cheddar Cheese Melty, gooey cheese
  • 1 bunch Fresh Cilantro Bright and aromatic garnish

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a skillet over medium heat, cook ground beef with taco seasoning until browned, about 6-8 minutes; drain fat.
  3. Lightly grease a 9x13 inch casserole dish.
Layering
  1. Layer tortillas at the bottom, followed by half of the refried beans, half the cooked beef, half the black beans, half the corn, and a generous portion of salsa.
  2. Repeat layers to build depth and richness, finishing with a tortilla layer topped with remaining salsa and cheddar cheese.
Baking
  1. Cover with foil and bake for 25-30 minutes.
  2. Remove foil and bake for an additional 10 minutes until cheese is bubbly and golden.
Finishing Touch
  1. Let cool for 5 minutes and garnish with chopped cilantro before serving.

Notes

For added flavor, sauté diced onions and bell peppers with the ground beef. Optional extras include jalapeños or flavored salsa. Use store-bought refried beans to cut prep time.
