  • 2 tbsp tomato paste Adds a rich, tangy depth.
  • 2 medium eggs Binds the filling together.
  • ½ cup heavy whipping cream For a creamy texture.
Topping
  • 1 ½ cups shredded cheese (preferably cheddar or Mexican blend) For a robust flavor.
  • 1 jalapeno, sliced (optional) For added heat.

Method
 

Preparation
  1. Preheat your oven to 350°F (180°C).
  2. In a large skillet over high heat, cook the ground beef, onion, bell pepper, and garlic together until browned.
  3. Drain off excess grease.
  4. Stir in the taco seasoning and tomato paste, ensuring all ingredients are well coated.
  5. Spread the mixture evenly into a 9x13 inch casserole dish.
Assembly
  1. In a separate bowl, whisk together the eggs and heavy cream until light and airy.
  2. Stir in half of the shredded cheese.
  3. Pour the egg mixture over the meat mixture, then sprinkle the remaining cheese and jalapenos on top.
Baking
  1. Bake for 15-17 minutes until the cheese is melted and golden.
  2. Let it rest for 5 minutes before serving.

Notes

Serve with sour cream, cilantro, or diced avocado. Consider alternatives like ground turkey or additional vegetables for a lighter version.
