- Melt 2–3 tablespoons of butter in a skillet over medium heat. Add the strips of corned beef and sauté for about 5 minutes, or until warmed through and lightly browned.
- Add the coleslaw mix to the skillet, cover, and cook for another 5 minutes to wilt slightly while preserving the crunch.
- Top the mixture with Swiss cheese, cover again or place under the broiler until the cheese melts and bubbles, about a couple of minutes.
- In a separate bowl, mix together mayonnaise, sugar-free ketchup, horseradish, hot sauce, Worcestershire sauce, salt, and pepper to prepare the dressing.
- Once the cheese is melted, drizzle the dressing generously over the top and garnish with chopped scallions.
