Ingredients

Main Ingredients
  • 1 whole whole bone-in turkey breast
  • 2 tablespoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1 stick unsalted butter at room temperature
  • 4 cloves garlic minced
  • 2 tablespoons fresh rosemary finely chopped
  • 2 teaspoons fresh thyme finely chopped

Method

Preparation
  1. Preheat the oven to 325°F (165°C).
  2. Rinse the turkey breast under cold water and pat it dry with paper towels.
  3. In a small bowl, combine kosher salt and black pepper. Season the turkey breast inside and out.
  4. Melt the unsalted butter and mix in the minced garlic, rosemary, and thyme. Massage this mixture under the turkey skin.
Cooking
  1. Place the seasoned turkey breast in a roasting pan, bone-side down, and roast for about 1.5 hours or until the internal temperature reaches 165°F (75°C).
  2. Once cooked, let the turkey rest for at least 20 minutes before carving. Slice against the grain and serve.

Notes

Consider brining the turkey breast overnight in a saltwater solution for extra flavor. You can also add citrus slices to the cavity for brightness.
