Filling & Coating Ingredients
  • 1/2 cup fruit jam or preserves Choose your favorite flavor for the cookie center.
  • 1/4 cup coarse sugar for rolling Adds a wonderful crunch and sparkle to the cookies.

Method
 

Preparation
  1. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  2. Add the vanilla extract and mix until well combined.
  3. In a separate bowl, whisk together the all-purpose flour and salt.
  4. Gradually add the flour mixture to the butter mixture, mixing on low speed until just combined.
  5. If the dough feels too soft, refrigerate for 15-20 minutes.
Shape the Cookies
  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Roll the dough into 1-inch balls, then roll each ball in coarse sugar.
  3. Place the balls about 2 inches apart on the prepared baking sheets.
Create Indentations
  1. Using your thumb or the back of a small spoon, make an indentation in the center of each cookie.
Fill with Jam
  1. Spoon about 1/2 teaspoon of fruit jam into each indentation.
Bake the Cookies
  1. Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden.
Cool the Cookies
  1. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes.
  2. Transfer them to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature for up to one week. Experiment with different jam flavors for variety.
