Method
 

Preparation
  1. Preheat your oven to 425 degrees F and line a large sheet pan with parchment paper.
  2. Prepare the kielbasa by placing each ring between two chopsticks or skewers, cutting vertical slits about 1/4 inch apart without cutting through.
Baking
  1. Arrange the slashed kielbasa on the lined sheet pan and bake for 20 minutes.
  2. While the kielbasa is baking, combine all glaze ingredients (peach preserves, olive oil, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, kosher salt, black pepper, and red pepper flakes) in a medium bowl and mix well.
  3. After 20 minutes, remove the pan from the oven, scatter sliced jalapeños and peaches around kielbasa, and brush generously with half of the glaze.
  4. Return the pan to the oven and bake for an additional 10 minutes.
  5. Baste the kielbasa and vegetables with the remaining glaze and cook for another 10-15 minutes, until kielbasa is crisped and browned.
  6. Remove from the oven, garnish with parsley, and serve warm.

Notes

Ensure even slits when cutting the kielbasa and customize the spice level by adjusting the amount of jalapeños. Consider adding smoked paprika or swapping peaches for nectarines when in season.
