  • 9 oz Fresh Tortellini Filled with cheese or meats.
  • 2 medium Fresh Carrots Diced.
  • 2 stalks Celery Diced.
  • 1 large Onion Diced.
  • 1 cup Heavy Cream For richness.
  • 1/2 cup Parmesan Cheese For serving.
  • 2 cups Baby Spinach Fresh.
  • 2 cloves Garlic Minced.
  • 1 tbsp Italian Herbs Oregano, basil, and thyme.
Optional Ingredients
  • 1 cup Shredded Chicken Optional for added protein.
  • 1 can Cannellini Beans For added creaminess.
  • 1/2 tsp Red Pepper Flakes Optional for heat.

Method
 

Preparation
  1. In a large pot, add Italian sausage and diced onions. Let them sizzle and turn golden and fragrant.
  2. Stir in the diced carrots, celery, and minced garlic, sprinkling in Italian herbs. Let them simmer together.
  3. Pour in chicken broth and bring to a bubbly simmer.
  4. Once bubbling, toss in fresh tortellini and baby spinach.
  5. Gently stir in heavy cream, ladle into bowls, and finish with Parmesan cheese.

Notes

This soup can be served with garlic bread, a fresh green salad, or crusty rolls. Can be refrigerated and reheated, and freezer friendly for meal prep.
