Preparation
  1. In a medium bowl, combine the softened cream cheese, powdered sugar, cocoa powder, vanilla extract, and peppermint extract. Blend until smooth and creamy.
  2. Fold in the whipped cream gently to add lightness to your mixture.
  3. Using a cookie scoop or your hands, portion out the mixture into small balls, roughly one inch in diameter.
  4. Roll each ball in chocolate cookie crumbs until fully coated.
  5. Place the coated bites on a baking sheet lined with parchment paper.
  6. Sprinkle miniature chocolate chips on top of each bite.
  7. Cover the baking sheet and refrigerate the bites for at least 1 hour before serving.

Notes

These bites can be made a day in advance. Consider adding a hint of orange zest or different extracts for a twist. For uniform size, use a scooper.
