- In a medium bowl, combine the softened cream cheese, powdered sugar, cocoa powder, vanilla extract, and peppermint extract. Blend until smooth and creamy.
- Fold in the whipped cream gently to add lightness to your mixture.
- Using a cookie scoop or your hands, portion out the mixture into small balls, roughly one inch in diameter.
- Roll each ball in chocolate cookie crumbs until fully coated.
- Place the coated bites on a baking sheet lined with parchment paper.
- Sprinkle miniature chocolate chips on top of each bite.
- Cover the baking sheet and refrigerate the bites for at least 1 hour before serving.
Notes
These bites can be made a day in advance. Consider adding a hint of orange zest or different extracts for a twist. For uniform size, use a scooper.
