Method

Marinate the Shrimp
  1. In a mixing bowl, whisk together the honey, lime juice, olive oil, garlic, chili powder, salt, and pepper.
  2. Add the shrimp, ensuring each piece is coated. Allow the shrimp to marinate for 10-15 minutes.
Prepare the Rice
  1. Season the cooked rice with rice vinegar and salt, mixing gently to ensure even distribution.
Prepare the Avocado
  1. In a separate bowl, gently toss the diced avocado with lime juice and salt.
Cook the Shrimp
  1. Heat a skillet over medium-high heat, then cook the marinated shrimp for 2-3 minutes on each side or until they are pink and cooked through.
  2. Remove from heat and set aside.
Assemble the Stack
  1. Using a food ring mold or a clean can, layer the seasoned rice at the base, followed by a layer of the zesty avocado, and top with the succulent shrimp.
Garnish and Serve
  1. Garnish the stack with chopped cilantro, sprinkle sesame seeds, and serve with extra lime wedges.

Notes

For a perfect flavor, allow shrimp to marinate longer. Consider adding sliced radishes or diced tomatoes for crunch.
