Ingredients
  

For the Marinade
  • 1 cup Fresh lime juice and zest Freshly squeezed for best flavor
  • 1/2 cup Runny honey Local honey recommended
  • 1/4 cup Olive oil
  • 3 cloves Garlic, crushed Can be chopped if preferred
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
Main Ingredients
  • 4 pieces Chicken breasts or thighs Use whichever is cheaper
  • 8 slices Fresh or canned pineapple rings Fresh is preferred but canned is acceptable
Optional Enhancements
  • 1/4 teaspoon Red pepper flakes For spice
  • 1/4 cup Fresh cilantro Chopped, optional for garnish
  • 1 tablespoon Soy sauce Add for depth of flavor if desired

Method
 

Marinating
  1. Combine honey, lime juice and zest, olive oil, garlic, salt, and pepper in a bowl.
  2. Place chicken in the marinade. Ensure all sides are covered and let marinate for at least 30 minutes (or up to overnight).
Grilling
  1. Preheat the grill and oil the grates.
  2. Place marinated chicken on the hot grill. Cook until char marks appear and chicken is cooked through, flipping halfway.
  3. In the last few minutes of grilling, add pineapple slices to the grill until caramelized.
Serving
  1. Serve chicken with additional lime juice squeezed on top, alongside grilled pineapple.

Notes

For best results, avoid burning the chicken by keeping an eye on the grill's temperature. Marinade chicken for adequate time to ensure flavor. Refrigerate leftovers for up to three days.
