Method
Marinating
- Combine honey, lime juice and zest, olive oil, garlic, salt, and pepper in a bowl.
- Place chicken in the marinade. Ensure all sides are covered and let marinate for at least 30 minutes (or up to overnight).
Grilling
- Preheat the grill and oil the grates.
- Place marinated chicken on the hot grill. Cook until char marks appear and chicken is cooked through, flipping halfway.
- In the last few minutes of grilling, add pineapple slices to the grill until caramelized.
Serving
- Serve chicken with additional lime juice squeezed on top, alongside grilled pineapple.
