Preparation
- Preheat your oven to 400°F (200°C).
- Line a baking sheet with parchment paper or lightly grease it.
- Peel and cut the carrots into uniform pieces.
Mixing
- In a small bowl, whisk together melted butter, honey, olive oil, minced garlic, salt, black pepper, dried thyme, and paprika (if using).
- Toss the carrots in the honey garlic butter mixture until evenly coated.
Roasting
- Spread the carrots in a single layer on the baking sheet.
- Roast the carrots in the oven for 20–25 minutes, flipping halfway through.
- Remove from the oven and drizzle with lemon juice (if using).
Serving
- Garnish with chopped parsley or fresh thyme and serve warm.
Notes
Leftover roasted carrots can be stored in an airtight container in the fridge for up to 3 days. For variations, consider adding other root vegetables like parsnips or sweet potatoes.
