Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper or lightly grease it.
  3. Peel and cut the carrots into uniform pieces.
Mixing
  1. In a small bowl, whisk together melted butter, honey, olive oil, minced garlic, salt, black pepper, dried thyme, and paprika (if using).
  2. Toss the carrots in the honey garlic butter mixture until evenly coated.
Roasting
  1. Spread the carrots in a single layer on the baking sheet.
  2. Roast the carrots in the oven for 20–25 minutes, flipping halfway through.
  3. Remove from the oven and drizzle with lemon juice (if using).
Serving
  1. Garnish with chopped parsley or fresh thyme and serve warm.

Notes

Leftover roasted carrots can be stored in an airtight container in the fridge for up to 3 days. For variations, consider adding other root vegetables like parsnips or sweet potatoes.
