Preparation
  1. Begin by preheating a heavy skillet over medium-high heat.
  2. Brush each side of the rustic sourdough slices with extra-virgin olive oil.
Toasting the Bread
  1. Place the bread in the hot skillet, toasting each side for 2-3 minutes until golden brown and crispy.
Preparing the Ricotta Spread
  1. In a medium bowl, combine the ricotta cheese, lemon zest, chopped thyme, flaky sea salt, and black pepper. Mix until smooth.
Assembly
  1. Generously spread the ricotta mixture over each slice of toasted sourdough.
  2. Warm the honey in the microwave for about 10-15 seconds until pourable, then drizzle over the ricotta-covered slices.
