Marinating the Shrimp
- In a bowl, combine the honey, chipotle sauce, olive oil, lime juice, salt, and pepper.
- Add the shrimp to the marinade, ensuring they're well coated. Allow to marinate for about 10 minutes.
Cooking the Shrimp
- Heat a skillet over medium heat. Once hot, add the marinated shrimp to the pan.
- Sauté for 2-3 minutes on each side, or until the shrimp turn pink and opaque.
Warming the Tortillas
- Warm corn tortillas in another skillet or microwave until soft and flexible.
Assembling and Serving
- Lay each warm tortilla on a plate and spoon the cooked shrimp onto each.
- Top with optional avocado slices and chopped cilantro.
- Serve with lime wedges on the side.
