Method
Roasting the Pistachios
- Preheat your oven to 400°F (200°C). Spread the shelled pistachios evenly on a baking sheet. Roast them for about 6 minutes until warm and fragrant, then allow to cool slightly.
Blending the Pistachios
- Add the roasted pistachios to a food processor. Blend for 2–3 minutes, scraping down the sides to create a coarse paste.
Incorporating Other Ingredients
- Add white chocolate chips, sugar, salt, and water to the food processor with the pistachio paste. Blend until the mixture is smooth and creamy.
Adjusting Consistency
- If desired, drizzle oil into the mixture while blending for a creamier texture. This step is optional.
Storing the Spread
- Transfer the homemade pistachio spread into an airtight container and refrigerate.
Notes
For added flavor, consider adding vanilla extract or chopped extra roasted pistachios. You can substitute white chocolate chips with dark chocolate chips for a richer taste.
