Method
Creating the Nougat
- In a medium saucepan, combine the granulated sugar, light corn syrup, unsalted butter, and evaporated milk. Place over medium heat and stir until the mixture comes to a boil.
Thickening the Mixture
- Continue cooking while stirring for about 5 minutes, allowing the mixture to thicken slightly.
Incorporating Flavors
- Remove the saucepan from heat and add the vanilla extract, mini marshmallows, and milk chocolate chips. Stir until the mixture is completely smooth and well combined.
Setting the Nougat
- Pour the nougat mixture into a greased 8×8 inch pan, smoothing it evenly. Chill in the refrigerator for 30 minutes to set.
Melting the Caramel
- For the caramel layer, combine the unwrapped caramels and milk in a small saucepan. Heat over low heat, stirring constantly until the caramel is completely melted and smooth.
Layering the Caramel
- Once the nougat has set, pour the caramel layer over it evenly. Chill for another 30 minutes.
Cutting the Bars
- After the caramel layer has set, cut the mixture into bars and place them on a parchment-lined tray.
Coating with Chocolate
- Melt the milk chocolate chips in a microwave-safe bowl. If desired, stir in vegetable oil to achieve a glossy finish.
Dipping the Bars
- Dip each bar into the melted chocolate, ensuring they are fully coated. Place the chocolate-coated bars back on the tray until the chocolate is set.
Notes
For a sweet-salty contrast, add a dash of sea salt on top of the caramel layer. You can also incorporate nuts or use dark/white chocolate for coating.
