Preparation
- Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
- In a large mixing bowl, whisk together the flour, baking powder, sugar, and salt until well combined.
- In another bowl, whisk the eggs until frothy, then add the oil, orange juice, and zest. Mix well.
- Combine the wet and dry ingredients by pouring the wet mix into the dry mix. Stir gently until just combined.
- Fold in the cranberries carefully without smashing them.
- Pour the batter into the loaf pan and smooth the top with a spatula.
- Bake for 55-65 minutes, checking for doneness with a toothpick inserted into the center.
- Allow the bread to cool in the pan for 10-15 minutes, then transfer it to a wire rack to cool completely.
- For the glaze, mix the powdered sugar with the milk in a small bowl until smooth.
- Drizzle the glaze over the cooled bread and allow it to set before slicing.
- Slice and enjoy each piece of bread!
Notes
Use fresh cranberries for the best flavor. Optional to add nuts for crunch. Store in an airtight container.
