For the Glaze
  • 1 cup Powdered Sugar Used for the glaze, adding sweetness.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
  2. In a large mixing bowl, whisk together the flour, baking powder, sugar, and salt until well combined.
  3. In another bowl, whisk the eggs until frothy, then add the oil, orange juice, and zest. Mix well.
  4. Combine the wet and dry ingredients by pouring the wet mix into the dry mix. Stir gently until just combined.
  5. Fold in the cranberries carefully without smashing them.
  6. Pour the batter into the loaf pan and smooth the top with a spatula.
  7. Bake for 55-65 minutes, checking for doneness with a toothpick inserted into the center.
  8. Allow the bread to cool in the pan for 10-15 minutes, then transfer it to a wire rack to cool completely.
  9. For the glaze, mix the powdered sugar with the milk in a small bowl until smooth.
  10. Drizzle the glaze over the cooled bread and allow it to set before slicing.
  11. Slice and enjoy each piece of bread!

Notes

Use fresh cranberries for the best flavor. Optional to add nuts for crunch. Store in an airtight container.
