Preparation

  2. Grease a baking dish with cooking spray or a drizzle of olive oil.
  3. In a large mixing bowl, combine cottage cheese, broccoli, bell pepper, zucchini, cherry tomatoes, spinach, and red onion. Stir until well mixed.
  4. In a separate bowl, whisk together eggs, olive oil, garlic powder, onion powder, black pepper, salt, and oregano.
  5. Pour the egg mixture over the vegetable mixture, stirring until evenly coated.
  6. Transfer the combined mixture to the prepared baking dish and spread out evenly.
  7. Sprinkle shredded mozzarella cheese over the top.
  8. Bake in the preheated oven for 30-35 minutes until the top is golden brown and the cheese is bubbling.
