Ingredients
  

Main Ingredients
  • 4 large eggs
  • 4 large flour tortillas
  • 1 cup shredded cheese sharp cheddar recommended
  • 8 ounces cooked bacon or sausage your choice of meat
  • 2 medium potatoes can be diced or shredded
  • 1 cup mixed veggies such as onions, peppers, and spinach
  • 1 cup salsa for inside or topping
  • to taste salt
  • to taste pepper

Method
 

Preparation
  1. Fry the diced potatoes and any raw veggies in a pan until browned.
  2. Cook your sausage or bacon in another pan.
  3. In a separate bowl, scramble the eggs over low heat.
  4. Lay out a tortilla and fill it with eggs, meat, veggies, and sprinkle with cheese.
  5. Roll the tortilla burrito-style.
  6. Optionally, sear in a hot pan for extra crunch.
Serving
  1. Serve with salsa, avocado, or hot sauce along with a side of fresh smoothie.

Notes

Wrap burritos in foil for transport. They freeze well and can be reheated in the microwave or a pan.
