Preparation
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the softened butter and granulated sugar until fluffy and pale (about 3-5 minutes).
- Incorporate the vanilla extract into the mixture.
- In a separate bowl, whisk together the all-purpose flour, cornstarch, and salt until blended.
- Gradually mix the dry ingredients into the wet mixture until just combined, being careful not to overmix.
- Roll the dough into 1-inch balls and place them on the prepared baking sheet, spacing them 2 inches apart.
- Make a small indentation in the center of each ball and spoon in about 1 teaspoon of your chosen fruit jam.
Baking
- Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
- Allow the cookies to rest on the baking sheet for a few minutes before transferring them to a wire rack.
- Dust with powdered sugar before serving.
Notes
