- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the rolled oats, grated apple, mashed banana, cinnamon, and salt. Mix until well combined.
- If desired, stir in the chopped nuts or dried fruit.
- Scoop portions of the mixture onto a baking sheet lined with parchment paper.
- Bake for 12-15 minutes until golden brown and firm.
- Let cookies cool slightly on the baking sheet before transferring them to a wire rack.
Notes
Use ripe bananas for naturally sweeter cookies. Consider adding nutmeg or adjusting spices for more flavor. Substitute with coconut, seeds, or chocolate chips for variations.
