Preparation
- Preheat the oven to 400°F (200°C).
- In a large skillet over medium heat, pour in the olive oil. Allow it to warm, then toss in the chopped onion and garlic. Sauté until translucent, about 3-4 minutes.
- Add the ground turkey to the skillet. Cook until browned and fully cooked through, about 7-10 minutes.
- Stir in the diced sweet potatoes along with the smoked paprika, cumin, salt, and black pepper. Let simmer for about 5 minutes.
- Add the chopped spinach, stirring gently until wilted, about 2 minutes.
Transfer & Bake
- Pour the turkey mixture into a greased 9x13 inch baking dish, spreading it evenly.
- Top with shredded mozzarella cheese.
- Bake in the preheated oven for 20-25 minutes, until the cheese is melty and bubbly, and the sweet potatoes are fork-tender.
Garnish and Serve
- Allow the dish to cool slightly before garnishing with fresh cilantro or parsley. Serve warm.
Notes
