Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet over medium heat, pour in the olive oil. Allow it to warm, then toss in the chopped onion and garlic. Sauté until translucent, about 3-4 minutes.
  3. Add the ground turkey to the skillet. Cook until browned and fully cooked through, about 7-10 minutes.
  4. Stir in the diced sweet potatoes along with the smoked paprika, cumin, salt, and black pepper. Let simmer for about 5 minutes.
  5. Add the chopped spinach, stirring gently until wilted, about 2 minutes.
Transfer & Bake
  1. Pour the turkey mixture into a greased 9x13 inch baking dish, spreading it evenly.
  2. Top with shredded mozzarella cheese.
  3. Bake in the preheated oven for 20-25 minutes, until the cheese is melty and bubbly, and the sweet potatoes are fork-tender.
Garnish and Serve
  1. Allow the dish to cool slightly before garnishing with fresh cilantro or parsley. Serve warm.

Notes

Perfect for meal prep; you can freeze portions or refrigerate for up to 4 days. To reheat, place in the oven at 350°F (175°C) for about 15-20 minutes.
