Method
 

Preparation
  1. Preheat the oven to 400 degrees F (200 degrees C).
  2. In a large skillet over medium heat, add 2 tablespoons of olive oil and allow it to warm up.
  3. Sauté the chopped onion and minced garlic until the onion turns translucent, about 3 to 4 minutes.
  4. Add 1 lb of ground turkey, breaking it apart and cooking until nicely browned and cooked through, about 7 to 10 minutes.
  5. Incorporate the diced sweet potatoes, smoked paprika, cumin, salt, and black pepper into the skillet. Stir and cook for another 5 minutes.
  6. Add the chopped spinach and stir until it wilts, about 2 minutes.
  7. Transfer the mixture into a greased 9x13 inch baking dish and spread it out evenly.
  8. Top the mixture with 1 cup of shredded mozzarella cheese.
  9. Bake in the preheated oven for 20 to 25 minutes until the cheese is melted and bubbly, and sweet potatoes are fork-tender.
  10. Let it cool slightly, garnish with fresh cilantro or parsley, and serve warm.

Notes

This dish is perfect for meal prep and keeps well in the refrigerator. Substitute ground turkey with plant-based protein for a vegan option.
