Preparation
- Preheat the oven to 400 degrees F (200 degrees C).
- In a large skillet over medium heat, add 2 tablespoons of olive oil and allow it to warm up.
- Sauté the chopped onion and minced garlic until the onion turns translucent, about 3 to 4 minutes.
- Add 1 lb of ground turkey, breaking it apart and cooking until nicely browned and cooked through, about 7 to 10 minutes.
- Incorporate the diced sweet potatoes, smoked paprika, cumin, salt, and black pepper into the skillet. Stir and cook for another 5 minutes.
- Add the chopped spinach and stir until it wilts, about 2 minutes.
- Transfer the mixture into a greased 9x13 inch baking dish and spread it out evenly.
- Top the mixture with 1 cup of shredded mozzarella cheese.
- Bake in the preheated oven for 20 to 25 minutes until the cheese is melted and bubbly, and sweet potatoes are fork-tender.
- Let it cool slightly, garnish with fresh cilantro or parsley, and serve warm.
