Ingredients
  

For the sauce
  • 1/2 cup low-sodium soy sauce
  • 1 cup water
  • 1/2 teaspoon apple cider vinegar or rice vinegar
  • 1/2 teaspoon toasted sesame oil See note
  • 1/4 cup (packed) brown sugar
  • 3 tablespoons cornstarch
  • 1 teaspoon grated fresh ginger
  • 4 cloves garlic (minced)
  • 1/4 teaspoon crushed red pepper flakes or more, to taste
For the main dish
  • 1 pound lean ground beef
  • 3-4 cups broccoli florets See note
  • 2 tablespoons olive oil divided

Method
 

Preparation
  1. Gather all your ingredients and prep them ahead of time.
Making the Sauce
  1. In a bowl, combine soy sauce, water, apple cider vinegar, toasted sesame oil, brown sugar, cornstarch, ginger, and minced garlic. Whisk until perfectly combined.
Cooking the Broccoli
  1. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat until shimmering. Add the broccoli and sauté for 4-5 minutes until tender but still crisp.
  2. Transfer it to a plate to retain its color and crunch.
Cooking the Beef
  1. Return the skillet to heat, add the remaining tablespoon of olive oil, and the ground beef. Cook for about 5 minutes until browned and cooked through.
  2. Spoon out any excess fat if necessary.
Combining Ingredients
  1. Lower the heat to medium, return the broccoli to the skillet, and pour the sauce over the beef and broccoli mixture. Stir well to coat.
  2. Cook for an additional 1-3 minutes until the sauce thickens.
Serving
  1. Remove from heat and serve hot.

Notes

For lower-calorie versions, substitute ground turkey or chicken. To store, freeze portions in airtight containers for up to three months.
