Preparation
- Preheat your grill or grill pan over medium-high heat.
- In a mixing bowl, toss the zucchini strips with olive oil, garlic powder, salt, and pepper.
Grilling
- Place the zucchini strips on the preheated grill and grill for about 4-5 minutes on each side until tender.
Mixing
- In a bowl, combine the drained chickpeas and crumbled feta cheese, and gently toss them together.
- In another bowl, mix Greek yogurt with chopped dill, parsley, lemon juice, minced garlic, and a pinch of salt.
Assembly
- Take a whole wheat wrap and spread a few spoonfuls of the herbed yogurt onto it.
- Layer the grilled zucchini strips and chickpea-feta mixture on top of the yogurt.
- Fold the sides of the wrap inwards and roll tightly from the bottom to the top.
- Optional: Grill the assembled wraps for an additional 2-3 minutes on each side for a warm finish.
- Slice the wraps in half before serving.
Notes
Choose firm zucchinis and ensure the grill is hot enough. Experiment with various herbs in the yogurt.
