Grilled Zucchini Feta Chickpea Wrap

Ingredients
  

For the Wraps
  • 2 medium zucchinis Fresh, vibrant, and tender, sliced lengthwise into thin strips.
  • 1 can (15 oz) chickpeas Drained and rinsed.
  • 1 cup crumbled feta cheese Creamy and tangy, adds richness.
  • 2 tablespoons olive oil Enhances the natural flavors of zucchini.
  • 1 teaspoon garlic powder Infuses depth.
  • Salt and pepper to taste Essential for seasoning.
For the Herbed Yogurt
  • 1 cup plain Greek yogurt Creamy base for herbed yogurt.
  • 2 tablespoons fresh dill, finely chopped Adds a fresh herbaceous note.
  • 2 tablespoons fresh parsley, finely chopped Brings vibrancy and earthiness.
  • 1 tablespoon lemon juice Adds a refreshing twist.
  • 1 clove garlic, minced Perfect complement to yogurt.

Method
 

Preparation
  1. Preheat your grill or grill pan over medium-high heat.
  2. In a mixing bowl, toss the zucchini strips with olive oil, garlic powder, salt, and pepper.
Grilling
  1. Place the zucchini strips on the preheated grill and grill for about 4-5 minutes on each side until tender.
Mixing
  1. In a bowl, combine the drained chickpeas and crumbled feta cheese, and gently toss them together.
  2. In another bowl, mix Greek yogurt with chopped dill, parsley, lemon juice, minced garlic, and a pinch of salt.
Assembly
  1. Take a whole wheat wrap and spread a few spoonfuls of the herbed yogurt onto it.
  2. Layer the grilled zucchini strips and chickpea-feta mixture on top of the yogurt.
  3. Fold the sides of the wrap inwards and roll tightly from the bottom to the top.
  4. Optional: Grill the assembled wraps for an additional 2-3 minutes on each side for a warm finish.
  5. Slice the wraps in half before serving.

Notes

Choose firm zucchinis and ensure the grill is hot enough. Experiment with various herbs in the yogurt.
