Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice
  • 2 teaspoons garlic, minced
  • 1 teaspoon ginger, minced
  • 1 teaspoon chili paste
  • 2 tablespoons vegetable oil
For the peanut sauce
  • 1/3 cup creamy peanut butter
  • 1 tablespoon honey
  • 1-2 teaspoons chili paste or sriracha (optional)

Method
 

Preparation
  1. In a large bowl, mix together the soy sauce, brown sugar, fish sauce, lime juice, minced garlic, ginger, and chili paste to create a delicious marinade.
  2. Add the chicken pieces to the marinade, ensuring they are thoroughly coated. Cover the bowl and refrigerate for at least 30 minutes, or up to 2 hours if possible.
  3. While the chicken marinates, prepare the peanut sauce by whisking together the creamy peanut butter, soy sauce, honey, lime juice, and chili paste in a separate bowl. Gradually add water until the sauce reaches your desired consistency.
Grilling
  1. Preheat your grill to medium-high heat.
  2. Thread the marinated chicken onto the skewers, leaving space between pieces for even cooking.
  3. Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has grill marks.
  4. Use a meat thermometer to ensure the chicken reaches an internal temperature of 165°F (74°C).
Serving
  1. Once off the grill, drizzle the chicken skewers with the homemade peanut sauce, and garnish with fresh cilantro.

Notes

Marinate overnight for richer flavor and juiciness. Soak wooden skewers in water for about 30 minutes prior to grilling to prevent burning. Consider adding bell peppers or onions for a colorful twist.
