Preparation
- Clean the fresh oysters thoroughly under cold water, scrubbing the shells with a brush to remove any grit.
- In a mixing bowl, combine unsalted butter, minced garlic, chopped parsley, chopped chives, finely diced shallots, grated parmesan cheese, salt, and pepper. Mix well.
- Preheat your grill to medium-high heat.
- Carefully shuck the oysters, discarding the top shell and keeping the oysters in the bottom half.
Grilling
- Place oysters on a tray or grilling-safe platter.
- Spoon a generous amount of the savory butter mixture onto each oyster.
- Grill the oysters for about 5-7 minutes, until the butter is bubbling and the edges start to curl.
- Once cooked, carefully remove the oysters from the grill and serve immediately, garnished with additional parsley.
Notes
