Method
 

Preparation
  1. Preheat your grill or grill pan over medium heat.
  2. In a small mixing bowl, whisk together the melted butter, lemon juice, lemon zest, chives, parsley, minced garlic, and kosher salt.
  3. Using kitchen shears, carefully cut the top of the lobster shell, starting from the meaty part of the tail all the way to the tip.
  4. Then take a sharp knife and gently cut halfway down the center of the lobster meat, being careful not to cut all the way through.
  5. To prevent the lobster from curling while cooking, gently insert a skewer through the length of the tail.
Grilling
  1. Brush the lobster tails all over with olive oil, seasoning them generously with salt and freshly ground black pepper.
  2. Place the lobster flesh side down on the hot grill and cook until you see beautiful grill marks, about 6 minutes.
  3. Flip the lobster over, and dollop a spoonful of your prepared butter mixture onto the meat side of each tail.
  4. Grill for an additional 5 minutes, or until fully cooked and tender.
  5. Once the lobster is beautifully grilled, remove it from the grill and sprinkle with crushed red pepper flakes for a touch of heat.
  6. Serve immediately with fresh lemon wedges on the side.

Notes

To enhance flavor, consider marinating the lobster in the buttery herb mixture for an hour before grilling. Be careful not to overcook the lobster for a juicy tail.
