Preparation
  1. In a small bowl, blend together the olive oil, lemon juice, minced garlic, oregano, thyme, Dijon mustard, salt, and pepper until perfectly combined.
  2. Add the chicken thighs to a large bowl and pour the marinade over them. Cover and marinate in the fridge for 1 to 2 hours or up to 8 hours.
Cooking
  1. Preheat your oven to 350°F (180°C).
  2. Place the marinated chicken thighs in a baking dish, draping them beautifully with the marinade.
  3. Bake for 40 to 45 minutes until the internal temperature reaches 175°F (80°C). Baste the chicken a few times during baking for crispy skin.
  4. Optionally, garnish with fresh lemon slices before serving.

Notes

To enjoy this dish later, store leftovers in an airtight container in the fridge for up to three days. Freeze portions in freezer-safe bags for up to three months. Reheat baked chicken in the oven to avoid drying out.
