Preparation
- In a large bowl, combine the olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper. Whisk until blended.
- Add the cubed chicken pieces to the bowl and coat them in the marinade. Cover and refrigerate for at least 30 minutes.
Grilling
- Take the marinated chicken out of the fridge and thread the chunks onto the skewers.
- Preheat the grill to medium-high heat.
- Grill the skewers for 10-12 minutes, turning every few minutes, until the chicken reaches an internal temperature of 165°F.
Making Tzatziki
- In a bowl, mix together the Greek yogurt, grated cucumber, lemon juice, chopped dill, and salt until well combined.
Serving
- Serve the grilled chicken souvlaki hot with a generous dollop of tzatziki sauce on the side.
Notes
For best results, allow the chicken to marinate overnight. Ensure chicken is well-coated in marinade; do not overcrowd skewers while grilling.
