Ingredients
  

For the Chicken Marinade
  • 1 lb chicken breast Cubed, tender morsels
  • 3 tablespoons olive oil Rich, golden oil
  • 2 tablespoons lemon juice Freshly squeezed
  • 2 cloves garlic Minced
  • 1 teaspoon dried oregano Earthy notes
  • salt and pepper To taste
  • 4 skewers skewers To hold chicken pieces
For the Tzatziki Sauce
  • 1 cup Greek yogurt Creamy, tangy base
  • 1 medium cucumber Grated for crispness
  • 1 tablespoon fresh dill Fragrant herb
  • 1 tablespoon lemon juice Second splash of brightness
  • salt To taste

Method
 

Preparation
  1. In a large bowl, combine the olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper. Whisk until blended.
  2. Add the cubed chicken pieces to the bowl and coat them in the marinade. Cover and refrigerate for at least 30 minutes.
Grilling
  1. Take the marinated chicken out of the fridge and thread the chunks onto the skewers.
  2. Preheat the grill to medium-high heat.
  3. Grill the skewers for 10-12 minutes, turning every few minutes, until the chicken reaches an internal temperature of 165°F.
Making Tzatziki
  1. In a bowl, mix together the Greek yogurt, grated cucumber, lemon juice, chopped dill, and salt until well combined.
Serving
  1. Serve the grilled chicken souvlaki hot with a generous dollop of tzatziki sauce on the side.

Notes

For best results, allow the chicken to marinate overnight. Ensure chicken is well-coated in marinade; do not overcrowd skewers while grilling.
