Ingredients
  

For the Chicken
  • 1 lb chicken breast, cut into chunks Can substitute with rotisserie chicken.
  • 1/2 cup plain Greek yogurt Adds creaminess and protein.
  • 2 cloves garlic, minced For flavor.
  • 1 lemon, juiced Adds acidity and flavor.
  • 1 tsp oregano, dried Essential Greek flavor.
  • 1 tbsp olive oil For cooking.
For the Assembling
  • 4 pieces pita bread For stuffing.
  • 1 small red onion or cucumber, sliced Optional, for crunch.
  • 1/4 cup tzatziki sauce Store-bought or homemade.
  • 1/4 cup fresh parsley or dill, chopped For garnish.

Method
 

Preparation
  1. Cut the chicken into chunks and place in a bowl.
  2. Add Greek yogurt, lemon juice, garlic, and oregano to the chicken and mix well. Marinate for at least 15 minutes if possible.
Cooking
  1. Heat olive oil in a pan over medium-high heat.
  2. Add marinated chicken to the pan and sear until golden (approximately 10 minutes), turning occasionally.
Assembling
  1. Warm the pita bread in the microwave or oven.
  2. Spread tzatziki on the warmed pita.
  3. Layer in cooked chicken, sliced onion or cucumber, and sprinkle with parsley or dill.
  4. Fold the pita and enjoy!

Notes

Leftovers can be stored separately. Best eaten within 2-3 days. Warm pita prevents splitting.
