  • 4 cups rolled oats
  • 1 cup raw pecan halves Can toast for added nuttiness.
  • 1/2 cup unsweetened shredded coconut Optional.
  • 1/3 cup pure maple syrup
  • 1/4 cup packed light brown sugar Can adjust for sweetness.
  • 2 tablespoons melted unsalted butter Or substitute with coconut oil for a vegan version.
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon pure vanilla extract
  • 1/4 teaspoon ground cinnamon Optional.

Method
 

Preparation
  1. Preheat your oven to 325°F (163°C) and line a baking pan with parchment paper.
  2. In a large bowl, combine the rolled oats, raw pecan halves, and shredded coconut (if using).
Make the Glaze
  1. In a saucepan over medium-low heat, whisk together the maple syrup, brown sugar, melted butter, sea salt, and vanilla extract (and cinnamon if desired) until the sugar dissolves.
Combine and Bake
  1. Pour the warm glaze over the dry mixture in the bowl and stir gently to coat.
  2. Evenly spread the mixture onto the prepared baking sheet and bake for 20 minutes.
  3. Stir the granola and return it to the oven for an additional 10-12 minutes until golden brown.
Cool and Store
  1. Allow the granola to cool completely on the baking sheet before breaking it into clusters.
  2. Store in an airtight container.

Notes

For added fruitiness, mix in dried fruits such as cranberries or raisins after baking. You can use different nuts or seeds based on your preference.
