Topping Ingredients
  • 200 g packed light brown sugar Adds sweetness and moisture.
  • 120 ml heavy cream Creates a creamy consistency.
  • 100 g shredded sweetened coconut Adds texture and flavor.
  • 100 g chopped pecans Provides crunch.
  • 1 teaspoon vanilla extract Enhances the flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease and line a 9x9 inch baking pan with parchment paper.
  2. Combine melted butter with granulated sugar in a bowl, and whisk in eggs and vanilla extract until light and fluffy.
  3. Sift together cocoa powder, flour, salt, and baking powder, then fold into the buttery mixture until combined.
Baking
  1. Pour the batter into the prepared pan and smooth the top. Bake for 20-25 minutes until a toothpick comes out with moist crumbs.
Topping Preparation
  1. In a saucepan, combine brown sugar and heavy cream. Bring to a boil and simmer until thickened.
  2. Stir in shredded coconut, chopped pecans, salt, and a splash more of vanilla.
  3. Pour the topping over the cooled brownies and let set for 30 minutes.
Serving
  1. Lift brownies out of the pan, slice into squares, and serve warm with vanilla ice cream or drizzled with caramel.
