Method
 

Preparation
  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or grease a muffin tin.
  2. In a large bowl, combine ground chicken, minced garlic, chopped onion, grated Parmesan, breadcrumbs, egg, parsley, salt, pepper, and Italian seasoning. Mix gently.
  3. Shape the mixture into small loaves or scoop it into muffin tins. Place on the baking sheet and bake for 22-25 minutes, until the internal temperature reaches 165°F (74°C).
Making the Sauce
  1. Melt butter in a saucepan over medium heat. Sauté the additional minced garlic for about a minute.
  2. Stir in flour and whisk for 30 seconds to create a roux. Gradually add milk while whisking, cooking until thickened.
  3. Add the extra grated Parmesan cheese and season with salt and pepper to taste.
Serving
  1. Serve the meatloaves warm, drizzled with the rich garlic Parmesan sauce. Garnish with fresh parsley.

Notes

Don't overmix the meat mixture; this can yield a dense loaf instead of a tender one. Consider using ground turkey for a leaner option. Prepare the mixture ahead of time and store in the refrigerator for up to a day before baking.
