Preparation
- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or grease a muffin tin.
- In a large bowl, combine ground chicken, minced garlic, chopped onion, grated Parmesan, breadcrumbs, egg, parsley, salt, pepper, and Italian seasoning. Mix gently.
- Shape the mixture into small loaves or scoop it into muffin tins. Place on the baking sheet and bake for 22-25 minutes, until the internal temperature reaches 165°F (74°C).
Making the Sauce
- Melt butter in a saucepan over medium heat. Sauté the additional minced garlic for about a minute.
- Stir in flour and whisk for 30 seconds to create a roux. Gradually add milk while whisking, cooking until thickened.
- Add the extra grated Parmesan cheese and season with salt and pepper to taste.
Serving
- Serve the meatloaves warm, drizzled with the rich garlic Parmesan sauce. Garnish with fresh parsley.
Notes
Don't overmix the meat mixture; this can yield a dense loaf instead of a tender one. Consider using ground turkey for a leaner option. Prepare the mixture ahead of time and store in the refrigerator for up to a day before baking.
