Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix the garlic, rosemary, thyme, salt, pepper, and olive oil to create a robust marinade. Rub this mixture all over the chicken breasts.
Cooking
  1. Place the chicken in a baking dish and roast for about 25-30 minutes, or until the internal temperature reaches 165°F (75°C).
  2. Meanwhile, boil the potatoes in salted water until tender. Drain and mash them with heavy cream and butter until smooth.
  3. In another baking dish, toss the carrots with honey, salt, and pepper. Roast them alongside the chicken for about 20-25 minutes, or until tender and caramelized.
  4. Serve the garlic herb chicken alongside the creamy mash and roasted carrots.

For best results, marinate the chicken for a few hours or overnight. Consider adding different herbs or using pre-cut vegetables for quicker prep.
