  • 1 cup butter Melted
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour Can substitute with whole wheat flour for a healthier option
  • 1 teaspoon baking powder
  • 1 teaspoon salt Essential for flavor
  • 1 cup rainbow sprinkles Don’t use nonpareils as they bleed color
  • 1 teaspoon almond extract Optional for a birthday cake flavor

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a baking pan.
  2. Melt the butter until smooth and glossy.
  3. Whisk in the sugar, followed by the eggs and vanilla extract until well combined.
  4. In a separate bowl, combine the flour, baking powder, and salt.
  5. Slowly add the dry ingredients to the wet mixture, mixing until combined (small lumps are fine).
  6. Gently fold in the rainbow sprinkles.
  7. Spread the thick batter into the prepared baking pan and sprinkle a few extra sprinkles on top.
Baking
  1. Bake in the preheated oven for 25-30 minutes, until the edges are golden and the center looks slightly shiny.
  2. Let the blondies cool before slicing.

Notes

These blondies store well at room temperature for up to three days. They can also be frozen for later enjoyment. To keep them soft, avoid over-baking.
