  • 1 teaspoon baking powder

  • 1/2 cup milk Can be substituted with almond milk for a dairy-free option.
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
Add-ins
  • 1 cup Fruity Pebbles cereal Add additional Fruity Pebbles on top before baking for extra crunch.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the milk, vegetable oil, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry mixture and stir until just combined, being careful not to over-mix.
  5. Gently fold in the Fruity Pebbles cereal.
Baking
  1. Pour the batter into the prepared loaf pan and smooth the top.
  2. Bake in the preheated oven for 45-55 minutes or until a toothpick comes out clean.
Cooling
  1. Allow the loaf to cool in the pan for 10 minutes before transferring it to a wire rack.
  2. Wait until completely cool before slicing.

Notes

For a sweeter loaf, drizzle a glaze made from powdered sugar and milk over the cooled bread. Store leftovers wrapped tightly to maintain freshness.
