Ingredients
  

Tortilla and Egg Base
  • 2 pieces flour tortillas Soft and slightly chewy, perfect for the quesadilla.
  • 2 pieces eggs Fresh, large eggs provide richness.
Cheesy Filling
  • 1 cup shredded cheese Sharp cheddar or melty mozzarella for flavor.
Seasoning and Cooking Fat
  • to taste salt Enhances natural flavors.
  • to taste pepper Enhances natural flavors.
  • 1 tablespoon butter or oil For frying; butter for richness, oil for a lighter option.

Method
 

Preparation
  1. Heat a skillet over medium heat and add a dollop of butter or a splash of oil, allowing it to melt and coat the pan evenly.
  2. Crack the eggs into the skillet and cook until the whites are set. Season with salt and pepper.
Assembly
  1. Place one tortilla in the skillet, sprinkle half of the cheese over it, and then add the fried eggs.
  2. Sprinkle the remaining cheese on top of the eggs and cover with the second tortilla.
Cooking
  1. Cook until the bottom tortilla is golden brown, then carefully flip the quesadilla with a spatula.
  2. Once both sides are golden and the cheese is melted, slice into wedges and serve hot.

Notes

For a lighter version, use whole wheat tortillas and a mixture of whole eggs and egg whites. Consider adding sautéed veggies or spices for variations.
