Preparation
- Heat a skillet over medium heat and add a dollop of butter or a splash of oil, allowing it to melt and coat the pan evenly.
- Crack the eggs into the skillet and cook until the whites are set. Season with salt and pepper.
Assembly
- Place one tortilla in the skillet, sprinkle half of the cheese over it, and then add the fried eggs.
- Sprinkle the remaining cheese on top of the eggs and cover with the second tortilla.
Cooking
- Cook until the bottom tortilla is golden brown, then carefully flip the quesadilla with a spatula.
- Once both sides are golden and the cheese is melted, slice into wedges and serve hot.
Notes
For a lighter version, use whole wheat tortillas and a mixture of whole eggs and egg whites. Consider adding sautéed veggies or spices for variations.
