Preparation
  1. Wash the ripe figs under cold water. Remove the stems gently and cut each fig into quarters.
  2. In a large, heavy-bottomed pot, mix together the quartered figs, granulated sugar, fresh lemon juice, and vanilla extract. Stir until everything is well combined.
Cooking
  1. Place the pot over medium heat. Allow it to come to a gentle boil, stirring occasionally.
  2. Cook for about 15-20 minutes until the mixture thickens into a jam consistency.
  3. If you prefer a smoother texture, use an immersion blender to blend the mixture until you reach your desired consistency.
Jarring and Storage
  1. Carefully pour the hot jam into sterilized jars, leaving about half an inch of space at the top.
  2. Allow the jars to cool to room temperature before sealing.

Notes

For longer-term storage, process the jars using a water bath canning method after filling them. Experiment with flavors by adding spices or mixing in other fruits.
