Preparation
- Preheat your oven to 375°F (190°C) and greas a small baking dish with cooking spray or olive oil.
- Sauté the chopped spinach over medium heat for about 2-3 minutes until it wilts. Drain any excess liquid.
- In a mixing bowl, combine the ricotta cheese, grated Parmesan, egg, garlic powder, salt, pepper, Italian seasoning, and fresh basil. Mix until smooth.
- Fold the wilted spinach into the ricotta mixture.
- Transfer the mixture to the prepared baking dish and spread it evenly.
Baking
- Bake for 25-30 minutes until the top is golden and bubbly. Let it cool for a few minutes before serving, and consider garnishing with extra fresh basil.
Notes
For extra flavor, add a pinch of nutmeg to the ricotta mixture. Consider incorporating sun-dried tomatoes or olives for a Mediterranean twist. Use pre-washed spinach to save time.
